Baked Salmon with Julianne Veggies
4 to 5oz piece of Salmon
1/2 of a zucchini - Julianne 
1/2 of a yellow squash - Julianne
1/2 cup sliced baby bella mushrooms
6-8 cherry tomatoes 1/2’ed
3 lemons slices
3/4 tblsp of Olive Oil
1 tblsp of balsamic vinegar 
Preheat the oven 400
Place the fish and veggies in a small glass baking dish
Sprinkle the olive oil and balsamic vinegar over ingredients 
Bake for 15-18 minutes checking at 15.  Salmon is cooked when it is sweating white-
Be sure not to over cook-
On the side:
1/2 of a yam or sweet potato
grilled asparagus
