At 9pm last night as I landed in Phoenix, I started craving veggies and chicken. Paul (hubby) met me at airport and as soon as I saw him I said “I really need something healthy to eat”-
He laughed. Once I was home I made myself a Berry Protein Shake and I was a happy girl.
This morning after they gym I had an egg white omelet with spinach, tomatoes and an ezekiel english muffin. Ohhhh - it was so good-
Recipe below-
There is a book I bought while at one the airports I have recently been through (sadly I’m not sure which airport it was)
The book is fascinating- I have read just about half of it in just few days.
The book is Change Your Brain Change Your Body. By: Daniel G. Amen, MD
I seriously can’t put it down. There is so much great information on how the brain functions and how it affects our weight, health, skin, heart, energy and focus.
It targets low activity and high activity in certain regions of the brain and how that effects
cravings causing impulsive and compulsive eating. It also confirms something I have known for ages - Sugar is a drug- it is a drug to the brain and body and it’s addictive- the more sugar you eat the more you want. Sugar is so bad!
It also talks a lot about depression and ADD. I highly recommend this book.
It has me seriously thinking about how I can continue to improve on my health and fitness and how I can stay off anti-depressants with nutrition, exercise and natural supplements.
Another book I really love for some similar information is Depression Free for Life-

Spinach, Tomato Omelet-
3 egg whites
1 whole egg
1 slide of low sodium turkey breast finely chopped
1 cup of finely chopped spinach
hand full of cherry/grape tomatoes 1/2’ed
1 ezekiel english muffin
Mix eggs- I add a drop of low fat milk and pepper
Heat in skillet lightly sprayed with Pam cooking spray
Add chopped turkey, tomatoes, spinach-
Let cook until eggs can be folded into omelet.
Flip and brown the other side for a minute
Toast english muffin-
I don’t put anything on my muffin (butter or high fat spreads) - I cut the omelet and put it on top of the muffin-
Enjoy!
